French Onion Pie Easy and Healthy

You know those days when you just cannot be bothered to spend forever in the kitchen…. but you still want something super tasty? This French Onion Puff Pastry Pie is the answer. Trust me, it is so easy and quick to make, and you can use whatever ingredients you have in the fridge or freezer. We will also claim its fancy enough to impress your family or friends, you just don’t have to spend hours in the kitchen to create it.

Easy French Onion Pie

First off we are using frozen puff pastry, so there is no need to mess around making dough from scratch. Just let it thaw until moldable. Which this is happening you make the filling, at this stage you have already got half the job done. The filling is a one pot deal too. You toss in your veggies and meat if using, mix in a packet of French Onion Soup mix (super easy shortcut), and then stir in some cream and milk to make everything creamy and delicious. It’s like a one pot wonder but with a flaky, golden pastry topping. Who doesn’t love the sound of that?

Vegetarian French Onion Pie or Meat? It’s Your Call

The best part about this recipe is super flexible. If you are a vegetarian, just skip the meat and load it up with more veggies. Mushrooms, peas, corn, onions, carrots… these all work perfectly. You could even add some spinach or broccoli if you have got them lying around in the fridge. It is like a veggie packed pie of goodness.

If you are more of a meat eater, go ahead and add chicken, beef, or turkey. Whatever you have got on hand will work. This pie is basically the ultimate “whatever’s in the fridge” kind of meal. I used diced ham when I made it, but you can use any kind of leftover meat. And if you don’t have leftovers, go grab some cooked rotisserie chicken from the store, super easy!

Pie Serving Options

You can totally eat this pie by itself because it is pretty hearty, but if you want to make it extra fancy (or stretch it further), serve it with a side salad or some roasted veggies. Honestly though, the flaky puff pastry and creamy filling is enough to make anyone happy. The great thing is you can cut it into big pieces if you are feeling hungry or slice it smaller if you are serving a group.

French Onion Pie

Ingredients

  • 1 sheet frozen puff pastry just thawed
  • 2 tablespoons butter
  • 1 brown onion coarsely chopped
  • 1 cup mushrooms diced or sliced
  • 1 1/2 cups frozen vegetables (peas, corn, peppers, etc)
  • 1 tablespoon flour
  • 1 packet French Onion Soup Mix 1.4 oz (40g)
  • 1 cup cream
  • 3/4 cup milk
  • 1 lb (Optional) diced or shredded meat (600g) chicken, turkey, port, beef, etc

Instructions

  • Preheat the oven to 420°F (220°C).
    Prepare a oven safe baking tray or pie dish by lightly greasing it.
  • Melt the butter in a frying pan over medium-high heat. Cook the onion and frozen vegetables stirring occasionally for 5 minutes or until the onion softens. Add the mushrooms, stirring occasionally for another 3 minutes.
  • (optional) Add the meat if using and stir occasionally until cooked.
  • Sprinkle the flour and French Onion Soup Mix over the mixture. Mix well. Pour cream gradually and stir while doing so. Pour the milk following the same process.
  • Simmer, stirring often, for 5-10 minutes or until the mixture thickens. If it’s too thick, stir in a little extra milk.
  • Transfer the mixture into the pie dish or baking tray. Top it with the puff pastry sheet.
  • Bake for 20-30 minutes or until golden and puffed.
