  • 1 lbs beef mince (500g)
  • 1 medium onion finely chopped
  • 1 zucchini coarsely grated
  • 1 carrot peeled, coarsely grated
  • 1 garlic clove crushed
  • 1/2 cup white rice
  • 18 oz jar tomato & basil pasta sauce (500g) any tomato based pasta sauce will work
  • 2 cups vegetable stock
  • Garlic bread to serve (optional)

Instructions

  • Mix well the beef, onion, zucchini, carrot, and garlic until well combined. Use a food process if desired.
  • Transfer mixture to a bowl and stir in the rice.
  • Roll a level tablespoons of the mixture into balls and place them on a large baking tray.
  • Place the pasta sauce and vegetable stock in a large saucepan over medium-high heat. Season to taste.
  • Bring to the boil, then add the meatballs to the sauce.
  • Reduce heat to low and simmer, partially covered, for 40 minutes or until the rice is tender and the sauce has thickened.
  • Serve the meatballs and sauce with garlic bread on the side.
