Ingredients

  • 2 tablespoons oil
  • 2 lb boneless meat (1 kg) diced or roughly sliced
  • 1 medium onion thinly sliced
  • 1 garlic clove crushed
  • 7 oz mushrooms (200 grams) sliced
  • 1 teaspoons sweet paprika powder
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons mustard
  • 1 cup chicken broth
  • 1 tablespoons flour
  • 1 cup sour cream
  • chives or parsley finely chopped, for garnish
  • rice, pasta or vegetables for serving

Instructions

  • Heat 1 tablespoon of oil in a skillet or large walled frying pan over medium-high heat. Add the chopped boneless meat and cook. Remove the meat and aside in a separate bowl.
  • Add the remaining tablespoon of oil to the same skillet or pan. Toss in the sliced onion and crushed garlic. Cook, stirring occasionally, for about 3 minutes, until the onion softens.
  • Add the paprika and cook for another minute. Add sliced mushrooms and cook for another minute. Pour in the Worcestershire, mustard, chicken broth and stir well. Let it simmer for 5 minutes.
  • Turn heat to low. Add the sour cream into the sauce, and season with pepper to taste. Place the meat back into the skillet or pan. Add flour and mix well making sure the meat is well coated with the sauce. Let it simmer for 5 minutes.
  • Serve with rice, pasta or vegetables. Sprinkle with chopped chives or parsley.

  • 1 tbs peanut oil
  • 1.1 lb (500g) chicken breast or thighs cut into bite sized strips
  • 4 oz (120g) Chinese cabbage (wombok) shredded
  • 3.5 oz (100g) carrot shredded
  • 5 oz (150g) snow peas thinly sliced lengthways
  • 2 green onions sliced diagonally
  • #### Lemon Sauce ####
  • 2 tbs peanut oil
  • 2 garlic cloves finely chopped
  • 2 tsp ginger finely chopped
  • 1/2 cup chicken stock
  • 1/4 cup (60ml) fresh lemon juice
  • 2 tbs Chinese cooking wine
  • 2 tbs light soy sauce
  • 1/4 cup (55g) sugar caster or brown sugar
  • 1 tsp cornstarch or flour

Instructions

  • **Cook the Noodles**
  • Bring a large saucepan of water to a boil. Add the noodles and bring to a boil. Cook, stirring, for 2 minutes. Drain and refresh under cold running water. Drain again.
  • **Make the Lemon Sauce**
  • Heat the oil in a wok over medium heat. Add the garlic and ginger. Cook, stirring, for 30 seconds or until aromatic. Add the stock, lemon juice, wine, soy sauce, sugar, and cornstarch. Cook, stirring, for 2 minutes or until the mixture thickens. Transfer to a jug. Rinse and dry the wok.
  • **Cook the Chicken and Veggies**
  • Heat the oil in the wok over high heat. Cook the chicken in 2 batches, tossing for 3 minutes or until golden. Transfer to a plate.
  • Add the Chinese cabbage and carrot to the wok and cook, stirring, for 3 minutes or until the cabbage is wilted.
  • Add the lemon sauce, noodles, snow peas, chicken, and half the green onions. Use tongs to toss until well combined.

Ingredients

  • 2 tbsp oil
  • 1 medium red onion thinly sliced
  • 1 large red capsicum/bell pepper coarsely chopped
  • 10.5 oz 1 1/2 cups long grain rice
  • 1 oz sachet taco seasoning
  • 1 barbecue chicken skin and bones discarded, meat chopped
  • 25.5 fl oz 3 cups Chicken Liquid Stock
  • 13 oz jar chunky salsa
  • 10 oz 3 cups grated pizza cheese
  • 7 oz 3/4 cup Sour Cream, pre stirred
  • 9 oz cherry tomatoes quartered
  • 1 avocado coarsely chopped
  • 2 green shallots thinly sliced

Instructions

  • Preheat oven to 210C/400F. Grease an 8 cup capacity baking dish.
  • Heat 1 tablespoon of 2 tbsp oil in a large frying pan over high heat. Add the sliced red onion, and chopped red capsicum/pepper. Cook, stirring, for 4-5 minutes or until the onions have softened. Add the long grain rice. Cook for 1-2 minutes. Sprinkle over sachet of taco seasoning. Stir to combine. Remove from heat.
  • Add the barbecue chicken, Chicken Stock, salsa jar and 2 cups of cheese. Pour the mixture into the prepared baking dish. Dollop over Sour Cream. Sprinkle with the remaining cup of cheese. Cover with foil and bake for 30-35 minutes or until golden and most of the liquid has been absorbed. Remove foil for the last 5 minutes of cooking. Set aside to cool slightly for 10 minutes.
  • Serve topped with cherry tomatoes, chopped avocado and shallots.

  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon paprika (regular or smoked)
  • 1/2 teaspoon garlic powder
