  • 2 lbs packet frozen tater tots (1kg)
  • 1 oz packet taco seasoning
  • 2 cups cheddar cheese coarsely grated
  • 1 tomato finely chopped
  • 1 bell pepper finely chopped
  • 1/2 small red onion finely chopped
  • Avocado mashed, to serve
  • Sour cream to serve
  • Your favorite jar of salsa or hot sauce to serve

Instructions

  • Preheat oven to 400°F (200°C)
  • Arrange the tater tots in a large ovenproof pan or baking dish in a single layer. Sprinkle evenly with taco seasoning.
  • Bake in the preheated oven for 20 minutes or until the tots are lightly browned.
  • Remove the pan from the oven and sprinkle the grated cheddar cheese evenly over the tater tots.
  • Return the pan to the oven and bake for an additional 5 minutes, or until the cheese is melted and golden brown.
  • Remove the pan from the oven and sprinkle with chopped tomato, bell pepper and onion.
  • Dollop mashed avocado, sour cream, and drizzle with salsa or hot sauce over the top.
